What is bresaola? It is one of the less known Italian cured meats.

It is dried cured beef typical from Valtellina (North Italy). It has the IGP European Quality Seal, which guarantees the traditional process in preparing it (even if it allows the beef to come from other places).

It is a non-fat cured meat that is commonly used in many diets (including the famous Dukan’s one). As it is not fat at all, it should be dressed to gain in taste.

The most common way to serve it is with rocket salad, grossly grated Parmigiano Reggiano or Grana Padano cheese and good quality extra virgin olive oil as you see on the photo above.
